Venison & Game Butchery Courses

Do you want to learn more about venison butchery or just more about venison:? Here at our Midlands Wild Meat Butchery in Derby, we run monthly venison butchery courses usually taking place on the last Saturday of every month.
You will be greeted on arrival by breakfast rolls filled with our in-house recipe Wild Boar and Venison sausages. Lunch will be a fantastic venison casserole made with local veg and wild venison. During the day you will be taught how to butcher, prepare and present a full deer into some fantastic roasting joints, steaks, braising steak and mince, you will also be taught how to choose a particular cut and how best to cook it.
Our courses are limited to just four places in order to give you a hands on experience with plenty of help and advice. At the end of the day you will take home the half carcass you have butchered, vacuum packed and ready cooking or suitable for the freezer.
The cost of all of this is just £185 per person including your breakfast, lunch and all teas and coffee during the day.
Sausage making course
We also offer an evening Sausage making course lasting approximately two hours where you will learn how to select and prepare the ingredients, right up to stuffing and preparing the sausage, after which you will have 2kg of sausage to take home.
Cost of the course is £55.00.
Faggots (Savoury Ducks) & Black Pudding making course

This is also an evening course where you will be taught how to select and prepare the ingredients, roll and wrap your faggots and how to make traditional black pudding.
